In short

  • Start with 4–5 meals, one protein, one carb, two vegetables.
  • Cook everything in bulk on one or two pans, not meal by meal.
  • Refrigerate 4 days of servings, freeze the rest immediately.

Why most people quit meal prep in week one

Almost nobody quits because cooking is hard. They quit because they tried to prep 21 different meals with 6 different sauces on a Sunday afternoon, burned out, and never did it again. The system below removes almost all of the decisions.

The system: 1 protein, 1 carb, 2 vegetables

A realistic Sunday

  1. Shop20 min

Buy one protein, one carb, and two vegetables in bulk — nothing exotic.

  2. Cook protein + carb35 min

Sheet pan chicken or ground beef, rice or potatoes in the oven or rice cooker at the same time.

  3. Cook vegetables15 min

Roast or steam while the protein finishes — overlap the timers.

  4. Portion10 min

Split into containers by eye. Perfect equality is not the goal.

  5. Store2 min

4 days in the fridge, the rest straight into the freezer.

How to avoid getting bored of the same meal

  • Keep 2–3 sauces or seasoning blends on hand and rotate them daily instead of changing the whole meal
  • Prep two different proteins instead of one if your budget allows it
  • Add a fresh element at the table — sliced avocado, hot sauce, a squeeze of lime

Frequently asked questions

How many meals should I prep at once?

Start with 4–5, not 21. It is easier to stay consistent, and you avoid the "I am sick of this" wall that kills most first attempts.

How long does meal prep actually last in the fridge?

Most cooked proteins, grains, and roasted vegetables hold up well for 4 days refrigerated. Freeze anything you will not eat within that window.

Do I need special containers?

Glass containers with airtight lids reheat evenly and do not stain or hold smells the way some plastic does — but any sealed container works to start.
